Copycat Kodiak Pancake Mix

What kid doesn't love pancakes
or waffles for breakfast!? Better yet- banana chocolate chip ones! I love the convenience of the Kodiak protein mix yet it is way cheaper to make on my own with ingredients I already have on hand! I make a double batch of these to use throughout the weeks.
For the dry mix:
1 cup rolled oats- ground into flour form
1 1/2 cups organic white unbleached flour
1 cup vanilla protein powder (@dotfit plant protein)
41/2 tsp buttermilk powder
1 tbsp brown sugar
1 tbsp baking powder
1/2 tsp pink Himalayan sea salt
Mix all well and store in airtight container.
To make pancakes/waffles:
Smash up banana
Mix in 1 egg
Add 1 cup dry mixture
1/2 tsp cinnamon (optional)
Add 3/4 cup buttermilk, milk, or water (Buttermilk is our favorite)
Chop up 1/4 cup to 1/2 cup dark chocolate chips to add in batter
Directions:
Spray waffle pan/flat grill
Add batter
Cook 3-4 minutes for waffles. For pancakes cook on medium-low until batter starts to get little holes throughout. Flip and cook another couple minutes until cooked throughout.
For a fun seasonal twist, switch out banana with 1/2 cup of fruit/veggie. Some examples could be applesauce, pumpkin, butternut squash, or sweet potato.
