Cottage Cheese Chicken Salad

I love cottage cheese. It’s a low calorie, high protein food that leaves you feeling satisfied after eating it. Lately, my mom has been sending me a ton of recipes featuring cottage cheese so, naturally, I had to jump on the bandwagon. I do have a major issue sticking to any recipe so, like all others, I had to tweak it until I found a way best for me. The great thing about chicken salad recipes is that you can essentially add or remove any items you do or don’t prefer. You can also switch out ingredients and cook seasonally. An example for this recipe would be swap out the apples for blueberries or raisins for craisins in the summertime. You could also swap out the dried fruit for fresh fruit like grapes as well. Here’s the recipe, I hope you enjoy!


Ingredients:

1 whole rotisserie chicken

1 cup good culture cottage cheese

4-5 celery stalks

1 Fuji apple

1/2 medium red onion

1/2 cup walnuts

1/4 cup pumpkin seeds

1/2 cup raisin medley (colorful raisins)

1 tbsp Sierra Nevada porter mustard (or Dijon)

Juice of 1 lemon

Salt and pepper to taste. I start with a tsp of both then add more to preference.


Directions:

  • Shred and chop rotisserie chicken and place in large mixing bowl

  • Add cottage cheese, mustard, lemon juice, salt, and pepper to food processor. Blend until all ingredients are mixed well. Use spatula and scrape into mixing bowl with chicken.

  • Finely dice up onion, celery, and apple. Add into mixing bowl.

  • Chop walnuts and pumpkin seeds and add to bowl.

  • Add raisins into mixing bowl

  • Stir all ingredients well.

  • Taste and add more salt and pepper accordingly.


Serve on fresh sourdough, with sliced cucumbers, almond crackers, or on its own! Enjoy this delicious and simple high protein meal or snack!
